Our distilling family of three has been passionate about sourcing local since day one,
and it began with our Australian Copper Still, fondly named ‘Doug’ after Steve’s Great
Uncle who used to soothe his ‘toothache’ with a G&T.
‘Doug’ was handcrafted in Ballarat specifically for Ambleside. As we anxiously anticipated
the arrival of our still we began building our tasting bar and planting our botanical walk,
that is now flourishing with a range of botanicals used in our distilling process.

At the end of the botanical walk our tall handmade cedar entry doors welcome you to
our Tasting Bar that oozes character, with polished concrete floors, a nine metre long
reclaimed brick wall, a window with a view of our distillery room and our large timber
deck overlooking the picturesque Adelaide hills. Share a platter and enjoy a G&T on the
deck while you watch the cows laze around in the sun or pull up a chair at the bar and
let our knowledgeable and passionate bartenders take you through our range
of unique gins.
